  1. What is your name and the name of your business?
    Rosa, Rosa Dolce Vita Cafe
  2. How long have you been working in the restaurant business?
    I have always been in the restaurant business. Prior to opening Rosa Dolce Vita Cafe 6 months ago, I had a cafe in Croydon Park for 5 years.
  3. What made you decide to start a restaurant? What’s the best thing about being a restaurant owner?
    I love cooking! Also, I really enjoy the contact with people, meeting different people, you get to know them and talk about different things.
  4. What Attracted you to Pyrmont?
    I liked Union Square, people can sit and enjoy themselves, there is a wide footpath and not many cars pass by.
  5. What, in your opinion, is the best thing about working/living in Pyrmont?
    I like the outside, there are tables inside and outside, lots of tourists, you can speak to people from different cultures.
  6. What do you feel if Implemented by the relevant government, would give Pyrmont that extra zing?
    Bike racks for riders, more pots and flowers in Union Square as well as chairs, a chess game where the older residents can get outside and play, shows on the weekends and during the week, all of this will help to build more of a community atmosphere.
  7. Do you offer any special dish/es?
    Nonna’s Breakfast: napolitana sauce, poached eggs, extra virgin olive oil, fresh basil and Italian bread on the side for dipping. Rosa’s Breakfast: Bread with a hole in the middle, an egg placed in the hole in the middle, extra virgin olive oil, toasted on both sides, topped with roasted tomatoes. Summer Breakfast: Italian bread with baby spinach on the top, a fried egg, napolitana sauce, asparagus and salmon
  8. Is there any piece of Law that would you like see changed/Modified or Created, that would really help the business?
    Paying a bond and monthly rent for the outdoor area in the front, as well as the insurance.
